Toshikoshi soba (year-crossing noodle) is a Japanese traditional noodle eaten on the evening of New Year’s Eve. How to cook Toshikoshi soba is very simple: Put boiled noodles, shrimp tempura, green onion and Hanpen in mentsuyu(noodle soup base). However, which ingredients to use for Toshikoshi soba depends on the area. There are various opinions on the origin of this tradition. One of them dates back to Edo period. People started to eat soba on New Year’s Eve because they believed that it would bring a good fortune.
